The A la Carte and Degustation Menus offers Modern Cuisine with House Specialities which are French based, and includes, amongst other dishes, an excellent selection of Daily Fresh Fish and Seafood.
There is also a comprehensive wine list. José Fernandes, the restaurant manager, has over the years carefully chosen wines that represent the very best wines in Portugal in terms of quality. We have always based our wines on quality and not necessarily on the cost of the wine which may not be value for money.

The Degustation Tasting Menu consists of 5 small gourmet courses to taste and enjoy, featuring the best dishes from the Kitchen. A different Menu Degustation has been created for each evening during the week. There is a further option to take the menu with 5 special selected tasting menus

Experience a memorable candlelit dinner in a truly beautiful and relaxed setting with friendly and attentive service in the Old Coach House. Two intimate dining rooms with three alcoves and traditional eucalyptus pole and cane ceilings. In the cooler months, open log fires provide a warm welcome in the bar, restaurant and lounge.

The Cocktail bar, with traditional eucalyptus pole and cane ceilings, has French windows leading to its own secluded terrace overlooking the lakes and waterfalls.

The bar terrace is set with colourful flowering hanging baskets and wicker furniture where you can enjoy a pre-dinner cocktail and canapés and peruse the menu or simply relax and enjoy the end of the day.

The restaurant terrace overlooks the stunning Botanical Garden with lakes and magnificent waterfalls. There is a small rock pool and a little stream close to the Restaurant Terrace that gently tumbles into the Spa Lake below.

Once a week, usually on a Thursday, weather permitting, we hold our champagne cocktail party on the sundeck with waiters offering delicious canapés.

During the warmer months, enjoy the beautiful Restaurant Terrace for lunch or dinner al fresco. Set under the double pergola with its gentle trickling fountain, flowering hanging baskets, surrounded by palm trees, bougainvillea, oleander and honeysuckle.

The Restaurant Terrace overlooks the underwater lit pool, the lakes and magnificent waterfalls, which are imaginatively lit at night.

The sundeck has outstanding views over the lakes and waterfalls. On Friday and Saturday during the summer, the sundeck is set for dinner. The views are spectacular at night and make a very special fine dining experience.

Live entertainment is provided during the week by a variety of talented musicians including Eudoro Grade who plays classical guitar and is considered to be one of the finest classical guitarist in Portugal.

 We offer the ultimate romantic dining experience on the Sanctuary with your own Butler to exclusively and discreetly look after you for the evening. A magical atmosphere is created in the middle of the Pine Lake and makes a wonderful and unforgettable experience.
